Don Eduardo, alongside his wife and children, are the second generation of his family to devote their lives to coffee cultivation. Having acquired Finca Aguada 8 years ago, Eduardo has spent time renewing their coffee crop and cultivating a new variety, Tabí.
The Tabí variety is characterised by its good production and sensory profiles, particularly the notes of red fruits, which attracts speciality coffee buyers. Eduardo is always training and educating himself on new coffee trends with regards to cultivation, planting and new varieties resistant to pests and environmental climates.
